Hello ya'll. You are probably wondering why I'm back so soon! :) Kidding. Kidding. Anyway, I am here to catch up for the final time!! Recipe # 6 on February 6 plus a big HAPPY BIRTHDAY to my most wonderful, beautiful and precious sister. I have THE most amazing sister and I am incredibly thankful for her. You probably think you have the best sister but my Sara takes the cake! Love ya dear- I'm sure you are thoroughly embarrassed now so I'll stop!
I have to say- it is fun to go through a cookbook this way- as I leaf though it, it's fun to see all the recipes I've made but sometimes it makes it a little tough. If there isn't a recipe that I want to make right then- I can't just go to another cookbook and find something to make. But it does make me stick to something because I have a tendency to throw my all into something and when I'm tired of it or "mastered it", it's real easy for me to move on the next "challenge"! So, that being said, today I was excited to make this coffee cake which we all loved and it was SO EASY to make!!
Cream Cheese Coffee Cake
First, you'll want to cream the butter and cream cheese.
Next, gradually add the sugar.
Add 2 eggs and mix well after each.
Look at all this buttery and creamy goodness! Makes me want to stick my finger in there and get a good lick. Oops, I confess. I did!
Alternate beween the milk and flour and when that's done, stir in the vanilla.
Spread it all in a greased 9x13 and then combine the topping ingredients. Sprinkle it on top and pop it in the oven! Now, you'll have to wat 40 minutes but when it's done- it'll be worth the wait! Mmmm, good.
Cream Cheese Coffee Cake
1/2 c. butter
1 (8 oz.) cream cheese, softened
1 1/2 c. sugar
2 large eggs
2 c. flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. milk
1 t. vanilla
Topping
Beat butter and cream cheese at medium speed until creamy; gradually add sugar, beating well. Add eggs, beating well after each addition.
Combine dry ingredients; add to butter mixture alternately with milk, beginning and ending with flour mixture. Mix at low speed just until blended after each addition. Stir in vanilla.
Pour batter into a greased 13x9. Sprinkle with Topping. Bake at 350 degrees for 40 minutes or until a toothpick comes out clean.
Topping:
1/2 c. flour
1/2 c. brown sugar
1/2 c. chopped pecans
1/4 c. butter, melted
Stir together all ingredients.

It was a fun birthday...thank you for making a tasty coffee cake to celebrate me:) I'm sure it was a close 2nd to mom's tasty pear dessert though...nice try:) Luff you too my precious sister!!
