Cooking my way through the Southern Living cookbook!

Well, yesterday I made another recipe from the cookbook and it was sooo good!  I didn't make it exactly like the book because I didn't buy the italian loaf of bread I needed so I used tortillas instead and it turned out delicious!  I was very surprised my family liked it as much as they did. It had some "green stuff" in it...  pesto. But they really liked it and H devoured it.  That was to be expected though- she likes all that healthy stuff- avocados, plain yogurt and lots of fruits and veggies.  :)

Grilled Pesto Sandwiches (or my version- Pesto Quesadillas!)
1 (6 oz.) package sliced mozzarella, cut into thirds
8 (1/2 inch thick) Italian bread slices
1/4 c. pizza sauce
1/4 c. pesto
28 slices pepperoni
2 T. butter, softened
Garnish: pepperoni slices

Arrange 1/3 of cheese slices on each of 4 slices of bread; spread evenly with pizza sauce.  Top each with another 1/3 of cheese slices and spread evenly with pesto.  Arrange pepperoni slices evenly over pesto; top with remaining 1/3 of cheese slices and remaining bread slices.

Spread half of butter on tops of sandwiches.  Invert sandwiches onto a hot nonstick skillet or griddle, and cook over medium heat 3 minutes or until browned.  Spread remaining butter on ungrilled sides of sandwiches; turn and cook 3 more minutes or until browned.  Garnish, if desired.

 Here is just a few random musings from this morning!  After we dropped V off at school, we came home and I decided to put H's hair into two ponytails!  Then she saw her toothbrush and decided that was what she needed to do next!  I love it when she discovered "another little girl" in the mirror"!!


Brushing our teeth is so much fun!

Oh look, another little girl is brushing her teeth too!  Let's brush them together.  :)

'Ok, now that we are all done with that, what do you want to do??'

'I just think you are the most bestest friend a girl could ever have!'

'My mom says I have to go now, will you come and see me again?  I sure will miss you.  Bye bye'
